Tasting notes

Riwaka-forward pale ale with Nectaron support. Good mouthfeel, naturally carbonated to 2.7 vol CO2. Vibrant tropical and citrus character from the large Riwaka additions.

About This Beer

Owen’s second pressure fermentation, and the first built around NZ hop varieties as the star.

A clean grain bill: American Ale, Vienna for depth, Aurora for a hint of colour and light crystal character. Riwaka takes the lead across three additions, with Nectaron for bittering and late-stage support.

The whirlpool technique carries over from RIPA Under Pressure: heat off at the flameout addition, rapid cool to 80°C for the Riwaka, then hold at 80°C through to the end of the stand before resuming cooling. That preserves more volatile hop compounds than pitching straight into hot wort.

Fermentation

18°C at 5 to 6 psi for the first four days. Day-5 dry hop through the Hop Bong, then the spunding valve closed and pressure allowed to build to 22.5 psi by day 9. Gradual cool to 5°C over days 10 to 14, holding 2.7 volumes throughout.

Bottling

Required a slow pressure reduction from 15 psi down to 3. At 7 psi a trub disturbance meant a four hour wait for it to settle before bottling could proceed.

Twenty litres bottled, carbonation good.
