Recipes
Canonical versions, distilled from the archive. Each one carries the lineage of the brews behind it, and a brew day sheet you can print.
Brewed 21
- Hazy IPA Eight brews across four years. The recipe restarted completely at IV and has barely moved since.
- Dusty Zombies A two-malt base and a single hop, grown out of a Zombie Dust clone. Seven brews, two brewers, and the grain bill barely moves.
- Panhead Supercharger APA A Panhead Supercharger clone, brewed seven times over four years. Gladfield Ale, two crystal malts, and a US hop trio.
- Red IPA Six brews over two years on a three-crystal grain bill that never moved. Owen's most developed recipe.
- SMASH Single Malt and Single Hop. A fixed frame — 6 kg, 300 g, two packets — for putting one hop under a spotlight.
- Resurgence Pale Ale Grain interest without crystal malt. Aurora does the work a caramel malt usually would, under a Riwaka-led NZ hop bill.
- Black IPA Four brews on a fixed four-malt bill. Roast for colour, not flavour, under 340 g of Simcoe, Riwaka and Mosaic.
- English Porter The most settled recipe in the archive. Four brews, one grain bill, one yeast — only the bittering hop has ever changed.
- Summer Haze A wheat-heavy summer saison with ginger and honey. Not a hazy IPA, despite the name.
- Flanders Red The 23 L unit batch for the annual barrel fill. Ten or eleven of these go into a 250 L oak barrel each year.
- Foeder Pale Sour The 23 L unit batch for filling a 115 L foeder. Brewed identically and repeatedly until the barrel is brimmed.
- NZ Hoppy Red Ale Three red beers in three months, each answering a question the last one raised. A malt-led NZ red rebuilt around tropical hops and a thiol-active yeast.
- Riwaka Rascal Blonde A Belgian blonde built on six New Zealand malts and NZ hops rather than the classic Pilsner-and-sugar route. Placed at Euroclash.
- Sour Citra Saison Kettle-clean sourness from Philly Sour, 100 g of Citra and a handful of coriander. Around 4.9% and very dry.
- West Coast Red IPA Four iterations of a NZ-inflected red IPA. The grain bill settled in 2024; the hops are still the variable.
- Wild Sour Base Wort A 50/50 pilsner and wheat wort with almost no hops. Deliberately neutral, so the culture is the only variable.
- Belgian Blonde The classic route to 25A — two malts, candi sugar, Saaz and Abbaye. Brewed by both of us within three days.
- Helles Exportbier A Valley Brewers style session beer. The club set the ingredients, the schedule was worked up from them, and two of us brewed it in different cities.
- Empire's End A club-supplied recipe for a BJCP 16D style session. Everyone brewed the same beer and compared the results.
- Fresh Hop Red IPA The red IPA grain bill run against 450 g of wet hops. Brewable for about three weeks a year.
- Quantum Haze A hazy built on the tangerine and stone-fruit axis, with the whole hop schedule arranged around Pomona's thiol activity.
