About This Beer

Second West Coast RIPA iteration, swapping BRY-97 for Froth Tech Vape FT02, a NZ dry yeast with reported thiol activity, and adding Aromazyme to enhance biotransformation.

The seven-malt RIPA grist stays: American Ale for the fermentable base, Vienna, then Shepherds Delight, Aurora, Redback, rye and a touch of Eclipse Wheat for the layered red malt character the style wants.

The split dry hop

Two stages rather than one. Mosaic goes in at day 4 with the Aromazyme dose, so its earthy tropical integrates during active fermentation. Riwaka follows from day 5 and stays much longer, adding citrus freshness later in the process.

Fermentation

FT02 pitched at 20°C under 1 to 2 psi. Vigorous enough to need foam management at days 3 to 4. Raised to 22°C around day 7 with the spunding valve closed for CO2 capture.

Packaging and tasting

Mixed packaging on day 20, counter-pressure bottling plus keg, carbonated to 2.35 volumes.

Tasted six days before packaging: good colour, strong West Coast profile, solid aroma. The counter-pressure bottling performed well for the bottle-share portion.
