About This Beer
A SMaSH-style American IPA pairing Golden Promise with Krush. The same single-malt platform as Golden Weka Ale, this time reading Krush as the sole hop.
Golden Promise is the entire fermentable load. A slightly higher mash at 67.5°C retained enough body to balance a heavy hop load while still finishing dry.
All Krush, across boil, an 80°C whirlpool and a dry hop on a gravity trigger. Krush is a Kiwi variety with tropical stone fruit, kiwi and mandarin character, and its high myrcene and thiol precursors make it especially interesting with a thiol-active yeast like Pomona.
Fermentation
Pomona at 18.5°C. Dry hop triggered on gravity, then stepped to 21°C and 22°C for cleanup. Pressure built to 16 to 17 psi during the rest before cooling to 4°C around day 14.
Packaging and tasting
Mixed packaging on day 15, keg plus bottles, carbonated to 2.4 volumes.
Tasted at packaging: strong aroma and flavour with good body for the single-malt format, and no off-flavours. A clean read on what Krush brings.
