Wild, Sour & Barrel-Aged Beer
What the mixed-culture and barrel entries in this journal are actually doing — a club solera I fill once a year, a 130 L foeder and a 57 L barrel from Wild Workshop, a 225 L saison barrique, and the house cultures that tie them together. Plus the principles behind all of it.

Most of the beers in this journal are clean — one yeast, done in a fortnight. A growing number are not, and they now account for most of the volume I make in a year.
There are four wood projects running at the time of writing, and they are genuinely different in kind: one is a shared solera I contribute a batch to annually, one is a foeder in my garage, one is a barrel at Owen’s place in Auckland, and one is a barrique of saison split between several brewers. This guide explains what each is doing and why, and the principles underneath that apply whether you have a barrel or not.
Wild and clean brewing do not share equipment. Brettanomyces and souring bacteria permanently colonise plastic, gaskets and tubing. I keep a fully separate set — fermenters, tubing, taps, thief — and nothing crosses over.
The club solera
The largest of them is not mine. Valley Brewers runs an informal barrel club, and its flagship is a 250 L Flanders red solera that lives at Jamie’s place and has been running for several years.
The mechanics are the interesting part. Ten or eleven brewers each brew a batch of the same Flanders red wort. On fill day everyone arrives with an empty keg, to take away their share of what has been aging for the past year, and a cube of fresh wort to go back in. The barrel is drawn down and topped up in a single session, then left for another twelve months.
I was first invited for the December 2024 fill, and collected my first share at the December 2025 round while adding another cube. Owen was invited that year as well, when a few of the regulars were unavailable. The next collect-and-top-up is December 2026.
Why a solera works better than a series of one-off barrels:
- The culture never restarts. The resident population has been working continuously for years, and a new fill is inoculated by something far more developed than anything I could pitch deliberately.
- Every draw is a blend of vintages. What comes home is a fraction of every year the barrel has run, not last year’s beer. That is where the depth comes from and it cannot be faked by aging a single batch longer.
- Risk is shared. One brewer’s off day is a tenth of the volume, diluted into a large, well-established culture.
It is also, bluntly, the cheapest way into serious barrel-aged beer. The cost of entry is one brew day a year and a keg.
The Rua foeder — 130 L, my garage
Dave at Wild Workshop passed on two barrels. The larger is an ex-Lark cask of about 130 L, now carrying Rua bugs, which I filled over four rounds and brimmed on 22 July 2026. It is a pale sour, and it is the first vessel I have owned where the vessel is the fermentation rather than a container for it.
The fill notes are on the Lark barrel page, which totals all seven cubes and logs the four rounds. The eighth cube of that same wort was diverted onto the Sixth Magic culture.
Two things I would tell anyone starting a vessel this size:
Ferment first, then transfer. The approach I took, on Dave Bell’s advice, was to ferment each round in a cube and move it across rather than pitching into the barrel. It keeps the barrel brimmed, avoids a violent primary inside a vessel you cannot clean, and lets you assess each round before it joins the blend.
Brim it, and keep it brimmed. Headspace is the enemy — see the oxygen section below. The barrel took roughly 132 L against a nominal quarter-cask figure, which is worth knowing before you plan your fill volumes. I banked about 13 L in a reserve keg for topping up.
Owen’s 57 L — Auckland
The smaller Wild Workshop barrel went north. Owen filled it with our shared house culture and a new Flanders red recipe derived from the club barrel’s, which makes it a lineal descendant of the solera without being part of it.
Small barrels are a different problem from large ones. Surface-area-to-volume is much higher, so oxygen ingress per litre is higher, extraction from the wood is faster, and the whole timeline compresses. A 57 L barrel will not want the same three years a 250 L one does — taste it more often and be ready to pull it earlier than the reference project suggests.
The Old Bones barrique — 225 L
Paul Fantham’s ex-North End barrique, filled July 2026 across several 50 L batches from different brewers using different saison strains, plus one fermented on a Brett slurry as primary. The premise is strain diversity blended in wood rather than a single fermentation aged in it.
One detail from that project worth carrying elsewhere: check whether your saison strain is diastatic before you plan the blend. LalBrew Farmhouse has had STA1 bred out and will arrive in the barrel still carrying its dextrins — real long-term Brett food. BE-134 is diastatic and will have stripped its own. Those two batches are doing quite different jobs in the same vessel, and that is a design decision rather than an accident.
The cultures
A mixed fermentation is a slow conversation between several organisms:
- Saccharomyces — ordinary brewer’s yeast; does the initial alcoholic fermentation
- Lactobacillus / Pediococcus — bacteria producing lactic acid, the clean tartness. Pediococcus is slower and causes the sick phase below
- Brettanomyces — a wild yeast working over months, drying the beer out and adding funk: earthy, leather, orchard fruit, barnyard
The result is acidity and complexity clean yeast cannot give you, and it is unpredictable and slow. Primary alone runs 3–12 months.

Sample every month or two and judge by taste. Rushing a sour gives thin, one-dimensional tartness.
The sick phase
If a Pedio-containing beer throws a blue-cheese or buttery aroma, sometimes with a ropy texture, around weeks 6–12 — leave it alone. This is the sick phase: Pediococcus producing diacetyl and slime as it sours, which Brett then cleans up over the following weeks to months. A fresh or thickening pellicle afterwards is a good sign.
The November saison wild did this textbook: strong blue cheese at about ten weeks, shifting to fruity and funky by fifteen as a new pellicle grew.
Worth being clear that this is the only context where butter is something you wait out. In a clean beer it is a fault with a deadline — see Butterscotch, Toffee & Hop Creep.
Oak and barrels
Wood does two jobs: flavour (tannin, vanilla, coconut, spice, by toast level) and, in a barrel, slow oxygen ingress that shapes a sour over time. You do not need a barrel for the first — cubes, spirals or staves give oak character at batch scale and are far easier to control.
- Format — cubes and spirals dose and remove more easily than chips; for long aging, cubes or staves integrate best
- Toast — light to medium for sours, preserving tannin structure; medium to heavy or charred for dark clean beers
- American vs French — American is bolder (coconut, vanilla); French subtler and firmer, and traditional for Flanders red
- Dose — start low, ~1–2 g/L for sours, and pull the wood before target, because the character keeps blooming after it comes out
- Sanitising oak — boiling water or a K-meta soak. Never StarSan or iodophor; porous wood absorbs them and leaches them back
Oxygen — the make-or-break variable
A little oxygen through the wood is part of the magic. Too much feeds Acetobacter, which makes acetic acid, and that cannot be undone.
- Keep barrels as full as possible. This is why the solera is drawn and refilled in one session rather than gradually, and why I brimmed the foeder and kept a reserve keg
- Add oak to beer already in a sealed or purged vessel rather than transferring exposed
- Sharp, hot vinegar developing means the oxygen load was too high
- Smaller barrels breathe faster per litre. A 57 L cask is not a scaled-down 250 L one
Brett in hoppy beer
Brett is not only for slow sours. As primary in a Brett IPA it finishes in 2–3 weeks and throws big pineapple and tropical character — the Philly Funk batches are the version of this I keep coming back to. It masks hop flavour, stays hazy, and turns harsh against high bitterness, so keep IBUs lower (≈50–55) than a clean IPA.
If you are starting out
Do a kettle sour or a Philly Sour batch first. It teaches you what acidity does to a beer and costs a fortnight rather than a year. If a club near you runs a barrel, join that before buying one — a share in an established culture beats a new barrel you have to inoculate from scratch, and you will learn what the format actually asks of you before you commit a vessel to it.
