About This Beer

V2 of the Dusty Zombies series, and a return to Citra.

V1 had departed from Citra to Superdelic and Nectaron and lost the pleasantly undead character the original Zombie Dust had. This one swings back to single-hop Citra at every stage to recover that combination of fruity tropical aroma over a dank sweaty-socks undertone.

The Ale and Vienna grain bill carries forward unchanged, with Vienna running high for a pale ale. That is deliberate, keeping malt presence through to the finish without competing with the hop load.

Verdant IPA continues from V1, for the soft juicy mouthfeel it lends a hop-forward beer at this gravity.

The 80°C whirlpool hold before chill concentrates the late additions, and the dry hop goes in at stable gravity with a temperature rise to drive out diacetyl and carry the hops.

Fermentation

Verdant at 18°C in the FermZilla. High vigour drove overflow events on days 3 to 5, which is a lesson about headspace planning with this yeast under a large dry hop load.

Dry hop at stable gravity on day 6, temperature raised to 20 to 21°C for a cleanup rest. Pressure stepped up and held to around 27 psi, then staged cooling to 3°C before packaging.

Packaging and tasting

Bottled day 13. Tasted at bottling: clean Citra expression with good carbonation after the pressure settle.

Verdant adds a softer fruit quality than the West Coast strains, which suits a Citra-forward pale ale.

Lineage
