About This Beer

Fourth iteration of the Resurgence Pale Ale, shifting to a much higher Vienna ratio alongside a Mosaic and Riwaka hop set, to deepen the malt support under a modern NZ hop profile.

Vienna comes up close to parity with the American Ale base. It adds warmth, richness and colour without the heavy caramel of a crystal malt, which makes it a better foil for tropical and citrus hops than crystal would be. Aurora contributes its bready, fruit-cake depth.

Mosaic and Riwaka run in tandem across every stage. Mosaic’s earthy tropical depth and Riwaka’s passionfruit brightness complement each other in both late additions and the dry hop.

Fermentation

Pomona at 18°C. Dry hop triggered on gravity at day 5, then temperature raised to 20°C with the spunding valve closed for CO2 capture. Cooled to 4°C on day 13.

Packaging and tasting

Mixed packaging on day 15, carbonated to 2.4 volumes.

Tasted at packaging: good Riwaka flavour and a clean finish.
