True to style, clean Belgian character. Fermented at zero pressure until Day 9, then spunding closed. Final: 1.9 vol CO2 natural, topped up to 2.6 vol.

About This Beer

A variation on Matt’s award-winning Belgian Blonde Ale. Similar grain approach, with Light Lager as the majority base plus Pilsner, Vienna, Wheat Malt, flaked wheat and a little rye, but the total grain bill cut to target a lower gravity than the original.

Mangrove Jack’s M31 Belgian Tripel replaces the original yeast.

Fermentation

Two packets at zero pressure. The spunding valve was closed on day 9 once fermentation had largely wound down, and by day 14 pressure had built to 6.9 psi at 6.4°C, which is 1.9 volumes. Topped up in the keg to about 2.6.

How it turned out

True to style: clean, dry and lightly effervescent.
