About This Beer
A high-gravity Nelson Sauvin showcase, brewed with prize ingredients from Euroclash: Nelson Sauvin from Wai Hops and AEB Fermoale AY3 from AE Brewing. The brief was maximum Nelson expression in a big hazy format.
A dense grain bill. Ale Malt carries the fermentable load, Vienna adds warmth and body, and a dual oat and wheat stack of Harraways rolled oats and flaked wheat gives the silky haze-forward mouthfeel. Chit Malt adds foam-positive proteins without colour. The thick mash needed extra stirring to prevent blockage.
Nelson Sauvin start to finish, across boil, an 80°C whirlpool and a large day-6 dry hop near terminal. The dry hop ran slightly over plan, since it went in as a whole bag. White wine, gooseberry and passionfruit are unmistakable at these rates.
Fermentation
Two packets of AY3 at 18°C. Roughly a 24 hour lag before foam appeared, then active by day 2 with about a 10 point drop. Steady from there: 1.036 by day 4, 1.022 at the dry hop on day 6. Stepped to 22°C over the following day and held at light pressure, 5 to 10 psi, while conditioning.
A PET sample at terminal showed strong hop aroma, good malt character, and a strong but not hot alcohol presence.
Packaging
Crash cooled from day 15 in 3°C steps down to 3°C, then kegged and carbonated to 2.4 volumes.
No formal tasting date recorded. This one was expected to benefit from conditioning time before evaluation.
