Three reds, converging
This is the third red beer Robin has brewed in three months, and the first one built on what the two before it actually taught rather than started fresh. None of them was a draft of this one. Each was brewed to answer a different question, and this is where those answers landed.

All three sit in the lineage table further down, ingredient by ingredient. They are held as one family on purpose: the Red IPA shares its American Ale base with this beer, and the malt-led red between them shares this beer’s specialty grains and its Pacific Jade and Superdelic spine. The thread runs through all three even though no two are the same recipe.
The Red IPA was Robin’s first solo all-grain batch, adapted from an existing recipe rather than designed from scratch — the sensible way to start on a new rig, where the job is learning the system rather than testing an idea. It came out well: 1.060 down to 1.011, properly dry and properly hoppy. What it left open was what Robin would do with a red beer given a free hand.
The NZ Rich Red Ale answered that, and deliberately went the other way. Malt-forward by design, lower in strength by design, built on RedBack and Shepherds Delight for a garnet colour and a layered toasted, dried-fruit character with the hops supporting rather than leading. A 67°C rest and roughly 18% specialty malt were both chosen to give it weight, and they did — it finished at 1.020, full and sweet, which is the beer that was being aimed at.
Brewing it is what made the next question obvious. A malt bill that good will carry more hop character than 28 IBU asks of it, and the specialty malts turn out not to need the mash temperature helping them build body. So: keep the malt, give it something to push against.
That is what this recipe is. The same specialty malts in the same proportions, so it is recognisably the same beer — with a cleaner base underneath, a cooler second half to the mash, roughly double the bitterness, and NZ tropical hops in place of the darker fruit ones.
It has landed almost exactly back at the first beer’s gravity, by a completely different route and for completely different reasons.
What actually changed
A cleaner base malt. Gladfield American Ale in place of regular Ale Malt. Gladfield make it specifically for brewers who find Ale Malt’s toasted note too assertive, and that note is precisely what competes with tropical hop character. The red colour and the dried-fruit depth come from RedBack and Shepherds Delight, which are untouched.
A cooler mash, in the second half. 67°C for the first thirty minutes, then down to 65°C — where the malt-led version sat at 67°C throughout. The reasoning behind dropping it is the most important line in the recipe: a beer carrying 50 IBU cannot also finish at 1.020, because sweet and bitter at the same time reads harsh rather than hoppy. The specialty malts build body on their own; the mash does not need to help them.
The drop is worth having but it is a partial one. Most conversion happens in the first twenty to thirty minutes, so a rest that starts at 67°C is doing much of its work up there — the finish lands near 1.017 rather than the 1.015 a flat 65°C rest would give. Hold 65°C for the full hour if you want it drier.
Sulfate-forward water, but only just. Around 1.4:1 sulfate to chloride — enough to give the hops definition, not enough to strip the malt of its weight. Pushing to 3:1 would be West Coast IPA water and the exact inverse of what made the malt-led version taste round. High sulfate also sharpens thiol-driven tropical character in a way that works against juicy fruit.
A yeast doing aromatic work. Pomona rather than a clean attenuator. It is high-IRC7 and converts geraniol to β-citronellol during active fermentation, and Nectaron carries geraniol at 1–1.5%, which is exceptionally high. Pairing them produces fruit character neither makes alone.
One dry hop, early. 75 g in a single charge at day two, while the yeast is still working — not at terminal. Partly for the biotransformation above, and partly for safety: this beer is bottle conditioned in flip-tops, and hops added after fermentation finishes release fermentable sugar out of the dextrins. Adding while the yeast is active means that sugar gets eaten in the fermenter rather than in sealed glass.
Brewing it
Efficiency is 88% on a straight malt grist. Take a pre-boil gravity reading — on this system, 30 L at 1.049 is what 88% looks like.
It is worth knowing where that number came from, because the wrong one had been in use. It was back-solved from the malt-led batch, whose gravity was read on day two with fermentation already running. That reading was understated, so the efficiency derived from it was understated too, and everything calculated on top inherited the error — about ten points’ worth. A single measurement taken on brew day settled it.
For an adjunct-heavy grist with oats or wheat, use 67% instead. Efficiency is a property of the grist, not of the brewer.
The whirlpool is 30 minutes at 75°C, and the Pacific Jade is sized against that. 75°C is the deliberate low band — it roughly halves isomerisation compared with a near-boiling stand and preserves bound thiol precursor for the yeast to convert. Chill to temperature before any hops go in.
Pitch at 18–20°C and let it rise to 21–22°C for the back half. Pomona’s range is 18–22°C and its stone fruit lives at the top of it; a beer held at the floor start to finish reads noticeably more reserved.
Do not bottle on a calendar. Two gravity readings 48 hours apart must be identical. The early dry hop substantially reduces the creep risk but does not eliminate it, and 750 ml flip-tops leave no margin. Two carbonation drops per 750 ml if stability is confirmed, one if there is any doubt.
Where these numbers come from
Everything above is what this beer actually produced on its one brew, 14 August 2026 — 88% brewhouse efficiency, OG 1.059, a 30-minute whirlpool, and a mash that ran 67°C for the first half hour before coming down to 65°C.
Two things are worth knowing before brewing it. Hold 65°C for the full hour if you want it drier — the warmer first half is worth roughly two points of finishing gravity, so a flat rest lands nearer 1.015 and 5.7%. And the salt additions are calculated from the Petone artesian analysis while the batch itself used Wellington reticulated tap; the additions dominate the baseline heavily enough that the ratio barely moves, so they stand either way. The one real difference is campden, which the reticulated supply needs and the artesian tap does not.
